Pignoletto is a grape indigenous to the Colli Bolognesi in Emilia-Romagna. Harvested from young, healthy vines planted over clay and limestone. Fermented in vat, with a little of the must from the same harvest added to the bottle for the second fermentation. Cloudy, the lees (sui leviti) remaining in the bottle to keep the wine fresh, and so neither filtered nor disgorged. A simple, yet extremely refreshing sparkling wine with texture (tannin) and citrus in spades.
