Made to pair with aromatic foods - sweet, sour, spicy exotic flavours. This is almost sake like as it has lots of texture and fleshy lychee character and a hit of spice on the finish.
The grapes were hand picked and whole-bunch pressed very slowly and gently in pneumatic presses over 5-8 hours. Natural fermentation with indigenous yeasts. Ages in stainless steel or big oak barrel depending on the vintage.
