Originally a Sardinian breed, the sheep were brought over by David's grandfather after he decided the similarities in the relief and climate of the Luberon foothills would make an apt home from home. This vibrant cheese strikes a distinct lactic note which gives way to hints of freshly pressed grape must and an intruiging celery, fenugreek finish.
